Indian Chicken Curry

This dish is seriously what they call 'curry in a hurry'.



If you get some good quality Indian spices, (which are available in all good oriental or Indian shops) this curry will taste delicious. The basic Indian spices are: garam masala, ground coriander, tumeric, chilli powder, cumin, cardamon and cloves. But of course there are many others you may wish to add depending on the food you are preparing. Sometimes you can buy spices which are already blended together and labelled 'curry powder': these include curry and the basic Indian spices, or you may wish to make your own.

This is a very mild curry that is suitable for the whole family, and very easy to prepare.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 8 servings

Ingredients
1.5kg chicken breast
3 carrots
2 onions
4 tablespoons of Indian curry powder
600ml of diced tomatoes
1 cup of cream
3 cups of rice

Method
Slice the onion and fry it up on olive oil.



Dice the chicken breast into cubes.



Cut the carrot into slices.



Add the carrot to the onion and fry up until both are soft.



Add the chicken.



Add the Indian curry powder.



Stir together until all ingredients are stirred through.



Add the diced tomato.



Cook until the chicken is soft and tender.



Add the cream and stir through. Leave to rest.



Cook the rice and serve the curry on top of the rice with some delicious dipping bread.
