A delicious treat that look fantastic decorating a party table. Turn your cupcakes into floating butterflies with a few easy steps.

3/4 cup of caster sugar
1 teaspoon vanilla essence
1 1/5 cups self raising flour
1/2 cup milk
1 tablespoon of honey
2 cups of thickened cream, for whipping
1/2 teaspoon vanilla essence
1/2 teaspoon white sugar
Preheat the oven to 180 degrees. Place cupcake patty pans into a cupcake baking tray.
In a mixing bowl, place the butter, sugar and vanilla essence and cream with an electric mixer until creamy and smooth.
In a separate bowl, lightly whisk the eggs with a fork, then gradually add the eggs to the butter mixture and beat until just combined.
Add the flour, milk and honey gradually and beat until just combined.
Spoon the mixture evenly among the patty cases.
Bake for 15-20 minutes, or until cooked when tested with a skewer.
Remove the cupcakes from oven and allow them to cool on a wire rack.
To turn the honey cupcakes into honey butterflies, use a sharp knife to slice a circle from the top of each cupcake. Remove the circle and slice each in half.
Whip the cream with vanilla essence and sugar. Fill the hole created in each cupcake with a layer of whipped cream.
With the straight edges of each semi-circle facing outwards, press the curved edges together into the centre of the cream layer.
Dust with icing sugar, and serve, or store in the refrigerator in an airtight container for a few hours.
