Honey and Soy Caramelised Carrots

Turn carrots into a sweet and savoury flavour explosion.

If you are looking for new ideas on how to cook carrots, them this is one of those ideas. There are many things that you can do with carrots rather than the plain old bake or boil; you can cook and then fry them with amazingly sweet and tangy flavours.

I like this dish because honey and soy go so well together; and the extra garlic just makes everything taste delicious.

If your kids are tired of the same old carrots served up on a plate with the usual meat and mashed potatoes, then try serving these carrots up with some Asian inspired cooking, like noodles, rice or crispy tofu. The ideas are endless.

If you love cooking healthy for the family then you can decide on the amount of honey and soy sauce you add to the dish to keep it healthy.

Tip: Do not overcook the carrots during the boiling process as they will turn mushy. They need to be firm for frying as they cook through during this process. When frying on oil, use extra virgin for extra flavour and only use one tablespoon as this will help the carrots caramelise with the soy sauce and honey (plus it won't make your carrots oily and unhealthy.)

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings

12 medium carrots
2 tablespoons of soy sauce
1 tablespoon of honey
2 cloves of garlic


Prepare your carrots.

Boil them until cooked but not soft (they need to stay crispy). I usually boil them for 10 minutes depending on their size.

Drain them.

Fry up the garlic in a frying pan and add the carrots.

Fry them until they are coated in the flavours.

Add the soy and honey and stir through, cooking for 5 minutes until all the flavours are combined.

Add a little bit of parsley and stir through until the flavours and colours are combined.

Serve up on their own or with your favourite meat or with rice and other delicious sides.
