Honey and Cranberry Muffins

I often find that when I make batches of cakes or biscuits, I end up with far more than the family can get through. Here is a recipe that makes a small number that both kids and adults can enjoy in one afternoon. Using honey reduces the amount of sugar needed, making them not only healthier, but also adds a delicious sweet flavour. Based on the brands I used, each muffin is about 238 calories.

Preparation Time: 25 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
125g wholemeal flour
40g margarine
3 tbsp wild flower honey
2 tbsp almond milk
2 tsp baking powder
1 tsp Truvia sweetener (or 30g caster sugar)
50g dried cranberries
1 egg

Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Mix together the flour, baking powder and sweetener/sugar.

Beat the egg and milk together.

Melt the margarine and honey in a saucepan, and then stir into the egg mixture.

Create a well in the flour, then fold in the egg mixture, until everything is fully integrated.



Stir in the cranberries.



Pour the mixture into muffin cases, and make.
