Ice cream in winter? Yes, especially if it is this homemade salted caramel ice cream.
Super creamy and delicious, this ice cream is easy to prepare and doesn't require an ice cream machine.
Keep this one to a sometimes treat, because it is very naughty!
Preparation Time: 20 minutes
Freezing Time: 4 hours
Makes: 12 servings
Ingredients
100g butter
1/2 cup of sugar
1 tsp of vanilla extract
1 tsp of salt flakes
1/2 cup of thickened cream plus 600ml extra
1 x 395g can of condensed milk
Method
In a small saucepan combine butter and sugar. Stir over low heat until sugar dissolves. Increase heat to medium and simmer for 3-4 minutes until golden in colour.
Add vanilla and salt and stir until salt dissolves. Remove from heat and add 1/2 cup of cream. Whisk until smooth. Transfer to a bowl. Cover and chill until cold.
In a large bowl, whisk together the extra cream and condensed milk with an electric beater until soft peaks form.
Swirl cold caramel through cream mixture to create marbled affect.
Transfer to a freezer proof container. Cover with glad wrap before putting the lid on tightly. Freeze for four hours or ideally overnight.
