Homemade Buttermilk Pancakes
Easy to make breakfast recipe for kids. Remember to serve with extra butter, your favourite fresh fruits and honey!

1 cup plain flour
1 tsp baking powder
¼ cup caster sugar
¾ cup buttermilk
1 egg, lightly whisked
Pinch of salt
In a large bowl sift together flour, baking powder and salt.
Stir in the sugar.
In another bowl whisk together the buttermilk and eggs.
Stir the buttermilk mixture into the dry ingredients.
Heat a non-stick fry pan over medium heat and lightly brush the base with melted butter.
Spoon the mixture onto the pan.
Cook for 2 minutes or until bubbles appear.
Using a spatula flip the pancake over to cook over the other side.
Turn onto a plate and repeat with the remaining batter.
Serve warm with extra butter, fresh fruit and honey if preferred.
