Turkey, seasoned the right way, can be enjoyed at any time of year - not just at Christmas. Cook the joints and you'll be using the cheaper, but more flavorsome cuts of meat - brilliant for a Monday meal, which will last the entire week.

Makes: 5 servings
Ingredients
1 Turkey joint
Tsp of the following
Dried rosemary
Dried thyme
Dried parsley
Black pepper
Mixed spice
2 onions
Olive oil

Required ingredients
Method
Add the seasoning to the turkey.
Cover with olive oil and rub into the meat, then place in the oven for 2 hours at 170 degrees/gas mark 4.
Slice the onions and greens and set aside.
Turn the turkey over after 1 hour.
20 minutes before the turkey is cooked, add the onions and place back in the oven.
Wash the greens and place in a saucepan, to a simmer for 10 minutes.
Remove the turkey from the oven
Carve the meat off the bone.
The meat should to tender enough to flake off.
