Admittedly I've only used one fish in this stew, but the added elements validate the title, and my nephew kept saying 'stoo', when I told him what I was making, so here's my fish 'stoo'.
Preparation Time: 2 minutes
Cooking Time: 2 hours
Makes: 5 kid servings
Ingredients
1 nutmeg clove
5 garlic cloves
Large pinch of sea salt
2 Tbslp butter
Tblsp curry powder
3 pieces of fried bream
1 carrot
Handful of:
fresh basil
rosemary
thyme
Method
Add the fish, seasoning and garlic to a saucepan.
Add the water and the dried herbs and simmer for 2 hours.
After an hour remove the lid and add more water.
Chop the ends off the carrot.
Wash and chop into chunks.
Add to the pan and replace the lid, allowing the stew to simmer for a further 15 minutes.
Remove from the pan and serve.
Serve with a hunk of bread and enjoy.
Please note, this takes 2 hours because you want the meat to flake and become tender, and it simply takes two hours for that process to happen. Be patient, it is well worth it.
