Healthy yet scrumptious banana bread

I was nervous about the outcome of this recipe after adapting it so that there was NO refined sugar, NO butter and NO oils (except natural coconut oil). The result was awesome! Delicious, light and the perfect amount of sweetness without the guilt. I urge you to try it for yourself!



Preparation Time: 25 minutes
Cooking Time: 45 minutes
Makes: 10 servings



Ingredients
1 cup of plain flour
2/3 cup of wholemeal flour (you could use all wholemeal as well)
1 tsp of baking soda
1/4 tsp of ground cinnamon
1/2 tsp of salt
1/2 cup of pure maple syrup
2 eggs
1/2 cup (just under) of melted coconut oil
3 large ripe bananas, mashed
2 Tbsp of natural greek yoghurt
1 tsp of vanilla extract
chopped walnuts or almonds (optional)

Method
Preheat oven to 175 C. Line the bottom of a loaf pan with baking paper.
Sift together the flour, baking soda, cinnamon and salt.
In a separate bowl, whisk the maple syrup and eggs together for a couple of minutes until well combined. Drizzle in the coconut oil slowly, whisking as you do so. Add the mashed bananas, yoghurt and vanilla.
Make a well in the centre of the dry ingredients. Fold in wet ingredients gently until JUST combined. Fold in nuts.
Pour in to lined loaf pan and smooth the top. Sprinkle over flaked almonds if you desire and bake in the oven for 45 minutes or until skewer comes out clean. Keep an eye on to it so you donít overcook.
Allow to cool completely in the tin before removing to serve.
