Healthy tomato soup
Tomato soup is often enjoyed by kids, but it is usually full of milk, cream, sugar, and salt. Cut all that out by making your own, and you'll have a healthy soup your little ones will still love.

: 20 minutes
: 5 servings
2 garlic cloves
1 tin of chopped tomatoes
Tblsp tomato puree
3 basil leaves
1 sprig of thyme
tsp black pepper
2 eggs (optional)
Splash of olive oil
Chop and slice all of the vegetables.
Transfer the chopped vegetables and seasoning to a frying pan, add the oil and butter, and cook over a low heat for 10 minutes
Add the chopped and whole fresh tomatoes, simmer for a further 10 minutes.
When the soup has reduced and thickened, pour in the stock.
Transfer to a blender.
Blend until smooth/consistency of your liking.
Serve with a garnish of basil for flavour and a chef-like flourish.
The soup can be transferred to a tupperware box, for an easy lunch time meal.
