Healthy needn't mean bland; I've turned a (fried) family favourite into a steamed lunchtime meal. Everyone can enjoy this dish, but mostly, kids don't even notice the difference. Here's to healthier meal times - No frying involved!
Preparation Time: 1 minute
Cooking Time: 40 minutes
Makes: 2 child servings
Ingredients
1 tin of tomatoes
Half tsp parsley
Half tsp thyme
Half tsp chili powder
Half tsp black pepper
Tblsp olive oil
3 mini chicken fillets
Method
Place the rice in a sieve, wash thoroughly and place in a saucepan of boiling water.
Place the sieve on top of the saucepan and add the chicken along with all of the seasoning.
Cover with a lid and cook over a simmering heat for 30 minutes
After 25 minutes remove the lid and add half of the tin of tomatoes and honey. Replace the lid and cook for a further 10 minutes
The tomatoes will have cooked through, and the honey will have added a slight sweetness.
Take the rice off the heat
This works as one meal for a hungry adult, too.
