Healthy Apple Berry Crumble

Everyone loves a warm apple crumble for dessert and even more so when it's good for you.

I have tried many different recipes for apple crumble in the past but this one is the perfect outcome of a lot of trial and error. It contains no refined-sugar or dairy and can be made gluten-free with the elimination of the oats (I love them for the crunch!).

The addition of mixed berries to this recipe gives it a wonderful sweetness perfectly matched with the crunchy topping.

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 4 servings

Ingredients

3-4 large sweet apples (like Pink Lady)
1 cup of frozen mixed berries
1 lemon

For crumble:
1 1/2 cups of almond meal
1/4 cup of slivered or flaked almonds
1/2 cup of oats
3 Tbsp of pure maple syrup (or rice malt syrup for fructose free)
3 Tbsp of melted coconut oil
Up to 1 tbsp of cinnamon
Pinch of salt

Method
Wash, core and dice apple in to cubes.

Layer in a round pie dish. Spinkle over mixed berries and squeeze the juice of lemon over fruit.

In a separate bowl, mix together remaining ingredients for crumble.

Sprinkle over prepared fruit.
Bake for 40 minutes until topping is golden and fruit is bubbling. Allow crumble to cool slightly before serving.

Whip up some cream with a dash of vanilla extract and serve with crumble (or for those who are dairy free, you can try coconut whipped cream!)
