Ham and Veg Slice

A fresh and scrumptious slice to add to a lunch box! This slice is packed full of veggies to make a healthy, energy-filled lunch box snack.



Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 12 servings

Ingredients

2 zucchini
1 carrot
1 red capsicum
100g slice ham
3/4 cup grated tasty cheese
1/2 cup self raising flour
1/4 cup vegetable oil
4 eggs
6 cherry tomatoes

Method
Preheat the oven to 180 degrees C and line a slice baking tray.

To prepare, grate the zucchini, the carrot, the cheese and coarsely chop the ham.

Place the zucchini, ham and carrot into a mixing bowl and stir well to combine. Chop and add capsicum here as well - I ate the capsicum the day before, so didn't have one on hand when making this, but it tastes great with it added!



Add the grated cheese and combine.



Sift the flour into the mixing bowl, then mix the flour through until all of the ingredients are evenly coated.



In a separate bowl, whisk the eggs and oil together. Pour these into to flour and vegetables mixture and stir well.



Pour the mixture evenly across a slice baking tray.



Bake the slice for 30 minutes, or until a skewer comes out clean when pierced through the centre.



Remove the slice from the oven and allow to cool in its tin for 10 minutes before lifting it onto a wire rack.

Slice into pieces and serve, or put in a lunch box.
