Ingredients 24 slices of wholemeal bread
100g sliced ham
125g can of corn kernels
1/2 a capsicum
2 tablespoon of chives
3 tablespoons of thickened cream
3 tablespoons of grated cheese
Preheat the oven to 180 degrees C.
Slice the crusts from each bread slice. Use a rolling pin to roll each slice out to a few millimeters thick. Butter one side of each slice. Press each slice - buttered side down - into cupcake baking tray patties.
Place a layer of ham slices into each bread cup.
Slice the capsicum and place a layer of slices into each bread cup.
Add drained corn kernels.
Add a layer of grated cheese.
Whisk the chives, egg, and cream together. Pour the egg mixture into each bread cup.
Bake for 10-15 minutes, until cooked through. Allow the quiches to cool on a wire rack before serving.
