Hakuna Matata Frittata

This frittata is easy to make and can be enjoyed by the whole family - no worries! I used mushroom and zucchini but you could use susbtitute different vegetables. If your kids don't like eating anything that looks like a vegetable, try grating the zucchini instead of chopping it.

Serve warm straight from the oven for a tasty dinner, or chilled for lunch on a sunny day.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 5 servings

Ingredients
6 eggs
1/2 cup cream
1/3 cup grated cheese
1 zucchini (courgette)
4 mushrooms
A little oil

Ingredients


Method
Preheat the oven to 180 degrees.
Chop (or grate) the vegetables.
Fry the vegetables in a little oil and drain off any liquid.

Cut chunky or grate if you prefer

Whisk the eggs, cream and cheese in a jug or bowl.

Stir the fried vegetables into the egg mix.
Pour the mix into a greased oven-proof dish.

Ready for the oven


Bake for 25 minutes in the oven or until golden. The frittata should puff up in the oven.

Cut into slices and serve. The frittata will last for several days in the fridge and makes a great lunchbox food.
