I love the Middle East and thankfully, my sister's kids love it too - they were brought up there for three years, so are accustomed to a little spice in their dishes. I made this quick and healthy lunch for my niece when I babysat for her recently. She ate the lot.
Ingredients 3 boneless chicken thighs
Half tsp black pepper
Tsp curry powder
Tsp mixed spice
Sprig of thyme
Half a red cabbage
Handful of fresh spinach
Rub the seasoning into the chicken thighs and place under the grill under a medium heat for 20 minutes, turning over after 10.
Place the cabbage in a saucepan of boiling water. Simmer for 10 minutes.
The cabbage will have wilted somewhat, and become slightly darker.
Plate up alongside some torn spinach. Feel free to add a little coconut oil to the spinach, and a bit of pepper to taste.
You might think kids don't, or won't eat cabbage or spinach, but when it's the only thing on the plate and you're eating it too, they will eat it! It sounds harsh, but I have witnessed and practised it, and it works. Plus you can give them a healthy treat afterwards for being so good and eating their vegetables.
