A gourmet eggy breakfast sounds lovely, but can kids enjoy it? Yes!

Ingredients
Handful of spinach
6 cherry tomatoes
3 eggs
Tblsp olive oil
Half tsp black pepper
2 basil leaves
Tblsp balsamic vinegar

Method
Wash the tomatoes and place in the oven for 30 minutes 160 degrees/gas mark 3
Wash the spinach and add to a frying pan with the oil, pepper, and crack the egg on top.
Scramble the egg and spinach together.
Remove the tomatoes from the oven.
Plate up alongside the scramble and drizzle over the balsamic vinegar.
