For those who haven't heard of pikelets before, they are basically mini pancakes but slightly thicker and denser. This version for gluten-free is, in my opinion, better than the gluten version. These are thick and fluffy and full of flavour. Paired with your favourite toppings and you're on to a winner!

You can choose to make these pikelet size or like me you can make them bigger and have them as pancakes!
