Gluten-free pikelets/pancakes

For those who haven't heard of pikelets before, they are basically mini pancakes but slightly thicker and denser. This version for gluten-free is, in my opinion, better than the gluten version. These are thick and fluffy and full of flavour. Paired with your favourite toppings and you're on to a winner!

This recipe also calls for easy ingredients that you can find at the supermarket. No fussing about. They also leave you feeling full without the bloating. The perfect recipe for a breakfast treat!

You can choose to make these pikelet size or like me you can make them bigger and have them as pancakes!



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 6 bigger servings

Ingredients
1 1/2 cups gluten-free self-raising flour
2 Tbsp caster sugar
1 cup reduced-fat milk (or buttermilk)
1 tsp vanilla extract
2 large eggs

Method
Sift flour and sugar in to a bowl with a pinch of salt. Make a well in centre.
In another bowl, whisk together milk, eggs and vanilla. Add to flour mixture.
Whisk together until all ingredients are just combined.
Lightly grease a pan with butter over medium heat and using a tablespoon at a time (quickly), add mixture to create a circle shape. You can choose here how big you want them.
When bubbles start to appear, flip your pikelet over with a spatula and cook for a minute or so until golden brown. Put on a plate underneath a tea towel to keep them warm while you make the rest!
Serve with your favourite toppings! (mine are strawberries and whipped cream!)
