The sweet aromas of this cake made with ginger and spice, topped off with gloriously creamy frosting will surely tempt everyone’s tastebuds.

Makes: 24 Servings
Ingredients
175g Butter
175g Dark Brown Sugar
3 Eggs
1 tablespoon ground Ginger
1 tablespoon ground Mixed Spice
1/2 cup Golden Syrup
1 3/4 cups SR Flour
1/3 cup Milk
For The Frosting
175g softened Butter
500g Pure Icing Sugar
1/3 cup Maple Syrup
Method
Preheat your oven to 160Deg C;
Cream your butter & sugar in a mixer;
Add the eggs, one at a time;
Add your ground spices and Golden Syrup and mix well, scraping the sides of the bowl if necessary;
Add your flour and milk and mix well till all combined;
Divide between baking papers and cook for approx. 12-15mins until done;
Combine butter, Icing Sugar and Maple Syrup in an electric mixer;
Beat well until all combined. (If the mixture is to runny, add more Icing Sugar until it reaches a piping consistency);
Place into a piping bag with a star nozzle and pipe onto each cupcake;
Add a cute mini Gingerbread Man for decoration and Enjoy!
