Little ones get sick more often than grown ups because of their near-constant interaction with new people: school, after-school clubs, music lessons, sports, ballet classes. In a bid to keep kids happy and fulfilled they can get the odd sniffle. When such times strike, try this protein-rich broth, full of nutrients

Makes: 5 servings
Ingredients
Whole cooked chicken
1 Tbsp ground black pepper
1 Tbsp curry powder
3 carrots
3 celery sticks
2 onions
Whole garlic bulb
Fresh bay leaves
Parsley
Thyme
Method
Place the vegetables and half of the seasoning in a deep saucepan. Simmer on a low heat for 15 minutes.
Remove the chicken from the oven.
Cover the vegetables with a pint/ 1 ltr of water and simmer for 5 minutes.
Remove the legs from the chicken and add along with any fat part of the carcass/ chicken skin - note, keep the skin on. Feel free to put the rest of the chicken aside and keep for lunches for the rest of the week.
Add two pints of water, cover with a lid and allow to simmer on low for 3 hours.
Once reduced, serve, with chunks of the chicken.
