Gather-round chicken dinner
Here's a perfect meal for Sundays, when you're having either family or a group of friends, over. Kids love this because the meat is so tender and full of flavour once its roasted, and the vegetables are sweet thanks to being caramelised in the oven.
: 5 minutes
: 1 hour and 40 minutes
: 8 kid servings/5 adults
A whole chicken
Tsp ground black pepper
Tsp ground cumin
3 tbslp olive oil
5 purple kale leaves
1 cup of brown rice
1 stock cube
3 bacon rashers
3 sage leaves
Half tsp black pepper
Handful of rosemary
Place the chicken on a baking tray and rub with the oil and all of the seasoning.
Now stuff the chicken with the seasoning, to lock in flavour. Place in the oven for 1 hour and 40 minutes at 170 degrees.
With 20 minutes to go place the rice along with the butter and salt in a saucepan and simmer.
Chop the carrots and shallots.
Add to the tray of chicken for the last ten minutes of cooking.
Add the bacon and seasoning to a griddle pan and fry for 3 minutes over a high heat.
Remove the chicken and vegetables from the oven.
Carve the chicken.
Serve with the rice, butter, and a smile.
