Fun Fried Basa Fish

Fish is a struggle with kids at the best of times, so why not enjoy a bone-free, skinless fillet of fish? In ideal world, I hear you say, but hear me out; it does exist.



Basa fish is an East Asian fish, which is bone-free. Whilst the physiognomy baffles me, the simplicity intrigues me. I purchased this fillet ready for my nephews impending visit. He's a fussy eater, and if there's any sort of skin on meat (even chicken), he turns up his nose.

I've titled this 'fun' fish because my nephew kept on calling the fish funny (I've no idea why), but in my eyes it was tasty, and thankfully he thought so too - he ate it all.

Preparation Time: 2 minutes
Cooking Time: 45 minutes
Makes: 2 servings

Ingredients
1 Basa fillet
Half a lemon
Tsp black pepper
Parsley
Garlic clove
1 onion
1 sweet potato
Spring greens



Method
Prick the sweet potato with a fork and place in the oven for 45 minutes.



Season the fillet and rub with oil.

Finely chop the garlic.



Place the fillet in a griddle pan with the garlic for 15 minutes.



Cook until a light golden brown colour coats the fish.



Wash the greens.



Place in saucepan of boiling water for 10 minutes.



Remove the sweet potato from the oven, and plate up.



I served only handful of the greens to my nephew
