Ingredients 2 carrots
200g corn kernels
2/3 cup self raising flour
1 1/2 teaspoons basil leaves
Ham slices, or capsicum slices
Grate 1 carrot and all 4 zucchini. Drain the corn kernels. In a mixing bowl, combine these with the eggs, flour and basil. Mix well to form a batter that is slightly lumpy because of its chunky ingredients.
Heat some olive oil in a non-stick frying pan over medium heat. Spoon on 2 teaspoons worth of batter at a time to form each fritter.
Press grated carrot onto each fritter to make hair. Use corn kernels to make eyes. And use a ham slice or a slice of capsicum to form a mouth on each fritter. Once bubbles appear on the surface, flip each fritter over and cook on the face side.
Once cooked on both sides, flip each fritter onto a wire rack to cool. Repeat with the remaining batter to make further batches of fritter faces.
