A run of hot weather (phew and aren't we feeling it all over Australia at the moment) often means a run of salads, either on the side or as a main meal. Unfortunately, no matter how crisp the lettuce and succulent the tomatoes, garden salads can start to get a bit dull so it's nice to have a few alternatives in your cookbook.
Preparation Time:10 minutes
Makes:4 side salads
Ingredients Quantity of precooked, cold, spaghetti or pasta
1 Roma tomato, seeds and pulp removed
1 Spring Onion, white part and leaves
1/4 Red Capsicum
Handful of fresh basil leaves, torn
2 tbs store bought stir-through spaghetti sauce or pesto
Finely dice all the vegetables. Put them and the basil leaves into a salad bowl.
Drizzle some olive oil over the pasta and use your fingers to separate the strands or pieces (depending on what you're using) and add to the salad bowl.
Add two generous tablespoons of stir-through pasta sauce to the vegetables and pasta and, using your fingers, toss to combine.
