Serving food for my niece and nephew isn't always easy, so it make it less of a struggle by creating dishes they can eat without a knife and fork - it adds a fun element for them, and means less washing up for me! Don't judge me, we all do it. Here's a recipe of finger food chicken which is easy to eat off the bone, and won't make too much mess.
Preparation Time: 5 minutes
Cooking Time: 45 minutes
Makes: 2 servings
Ingredients
5 pieces of chicken: thigh/leg
Tsp dried paprika
5 Thyme sprigs
2 garlic cloves
Tblsp coconut oil
Method
Wash the chicken thighs and place in a pyrex dish.
Add all of the seasoning and place in the oven for 45 minutes at 170 degrees/gas mark 5.
Halfway through chop the red pepper into chunks.
Add the kale and pepper to the dish and place back in the oven for 20 minutes.
Remove the kale after 10 minutes (so it doesn't burn to a crisp) and continue to cook the chicken and peppers.
Remove the dish from the oven.
Serve with the peppers and kale.
