Stacked sandwiches make for an exciting bite, usually with little effort: use a slice of bread and start layering.
This is possibly one of the easiest and quickest way of getting nutrients into kids.

Makes: 1 serving
Ingredients
Half a beetroot bulb
Tblsp hummus
1/3 ripe avocado
Tsp alfalfa sprouts
Handful spinach
5 baby radishes
Method
Spread the hummus on to the bread.
Slice the radishes as thinly as possible and top the hummus sandwich, along with the alfalfa sprouts.
Using a fine grater, grate the beetroot on top of the sprouts.
Tear the spinach and carefully place it on top along with the avocado.
Generously dress with olive oil, black pepper, and serve.
