Egyptian Chicken & Sides

Egyptian spices work so well with chicken, coupled with spicy rice sweet potato and salad, it's easy to recreate dishes you've enjoyed on holiday - ones that kids will enjoy too! My teenage cousin loved this dish I made for her and myself, only last night.



Preparation Time: 10 minutes
Cooking Time: 1 hour
Makes: 3 servings

Ingredients
1 cup of brown rice
2 sweet potatoes
8 pieces of chicken
Handful fresh rosemary
1 lemon
2 garlic cloves
1 birds eye chilli
2 tomatoes
Handful fresh spinach
Glug olive oil
Tsp mixed spice
Tsp ground black pepper
Tsp mixed herbs
Tsp coconut oil

Method
Add the herbs and spices to a tray-sized piece of greaseproof paper.



Grate the zest of the lemon.



Squeeze the juice of the lemon over the chicken then add the lemon half next to the rest of the seasoning on the greaseproof paper.



Add the chicken to the herb and spice coated tray.



Rub the meat all over and place in the oven for 1 hour at 160 degrees.

Wash the rice in a sieve.



Add the chilli, coconut, herbs, a garlic clove and salt to a pan along with the rice. Add 2 cups of water and simmer for 35 minutes.



Remove the chicken and sweet potato from the oven.



Add to a plate along with some torn, fresh spinach.



Add freshly chopped tomatoes and some oil and basil to the spinach for flavour.



Remove the rice from the hob.



Add the rice to the dish and serve.
