Easy Thai yellow curry

A delicious chicken curry that tastes better than take away.



If you love a quick and easy curry but don't want to spend the money on Thai take away, then this recipe will delight you. Always buy a good quality curry paste and some good coconut milk. You can find authentic curry pastes at your Asian grocer.

I used chicken with this curry but you can also use fish. Yellow curry is mild which makes it suitable for kids too as it won't burn your mouth.

This curry is something to throw together when you are in a rush. Serve with rice and heated naan bread for dipping.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 5 servings

Ingredients
1 double chicken breast (approximately 600g)
2 carrots
1 red onion
2 cans of coconut milk
4 tablespoons of yellow curry paste
2 cups of rice
A handful of coriander

Method
Dice the chicken into cubes.

Slice the carrots into long strips and dice the onion finely.



Fry the onion and garlic up on olive oil and stir in the curry paste.



Add the cubed chicken and stir through.



Add the carrots.



Add the coconut cream and cook for 15 minutes or until the chicken is cooked through.



Add some coriander over the curry for a fragrant and fresh flavour.
