This is a quick cheesy snack which kids can prepare themselves. I've kept it very simple, however, you could add refried beans, avocado, chicken, or anything you like really. Quesadillas (cheese filled tortillas) are traditionally cooked in Mexico for lunch, but I think they make the perfect afternoon tea treat.

Simple kids quesadillas
Preparation Time: 2 minutes
Cooking Time: 2-4 minutes
Makes: 1-2 servings
Ingredients
2 flatbreads (tortillas work best)
2 slices cheese
Method
Lay out your flatbread and place the cheese (and any other sauces, vegetables, or meat you wish to add) on the top, leaving half the bread empty.

Lay the cheese on top
Fold the empty half of the bread over to make an edible lid.

Fold the bread over
Grill your quesadilla in a fry pan, griller or sandwich press for about two minutes. Be careful not to burn the cheese.

Place in a griller or sandwich press

Lightly grill the quesadilla
Serve with a side salad, and enjoy your cheesy Mexican snack. These would also be the perfect food to serve at a Mexican themed party - Ole.
