Dinner (157)      Chips (5)      Seasoning (1)
Easy and delicious chunky chips coated in a salty herb seasoning with a touch of spice.

Preparation Time: 15 minutes
Cooking Time: 40-60 minutes
Makes: 4 servings

Ingredients

5-6 large floury potatoes
1 teaspoon flaked sea salt
1 teaspoon celery salt
1 teaspoon garlic salt
1 teaspoon cajun seasoning
1/2 teaspoon dried, ground oregano
1/2 teaspoon dried, ground basil
1/2 teaspoon dried, ground parsley
A pinch of black pepper
Olive oil, about a tablespoon

Method

Preheat the oven to 200 C.

Peel and wash the potatoes. Slice each length ways into chips that are about 1cm thick.

Dry blanch the potato pieces. Spread the cut chips evenly over a large dinner plate in a single layer. Microwave the chips for 10 minutes on high.

In a bowl, combine the herbs, spices and seasoning.

Spread the potato pieces into a single layer over a baking tray.

Use your hands to toss the potato pieces in olive oil, then in the spice mix.

Spread the chips back into a single layer. Bake for 40-60 minutes (flip the chips over half way through) until crispy and cooked through.
