Easy Meatloaf

Meatloaf is a handy recipe to make if you need to prepare dinner for a large gathering of teenagers in a hurry. This recipe is also simple enough for kids to make all on their own, or they will at least enjoy getting their hands into the mixing bowl and squelching all that raw mince meat for you (just make sure they wash their hands well at the end).

Preparation Time: 10 minutes
Cooking Time: 60 minutes
Makes: 10 servings

Ingredients
1 kg raw mince meat
2 finely chopped red onions
2 teaspoons whole grain mustard
2 handfuls of cooked rice
1 teaspoon cumin seeds (optional -for flavoring)
2 eggs
Baking paper

Method

Mix together the finely chopped red onions and whole grain mustard.

Add the raw mince meat, cumin seeds (optional), cooked rice and the eggs, then mix these ingredients thoroughly together - this step is best done with your bare hands to spread all the ingredients evenly throughout the mixture.

Line a large oven proof baking dish with baking paper and place the meatloaf mixture into a log shape on top.

Smooth the edges of the meatloaf and place in a moderate oven for an hour, or until the top is golden brown.

Take it out of the oven, then let your meatloaf "rest" for five minutes before cutting it into even slices and laying flat on the dinner plates. Serve with a delicious side salad and dollop of tomato sauce. Enjoy.
