A quick and easy chocolate biscuit that makes the perfect addition to any cooking repertoire!

Ingredients
180g butter
1 egg
1/2 teaspoon vanilla essence
1 1/2 cup plain flour
3/4 cup brown sugar
1/2 cup cocoa powder
Method
Preheat the oven to 180 degrees C and line some baking trays.
Use a wooden spoon to cream the butter, vanilla essence and brown sugar until creamy and pale.
Add the egg and mix well to combine.
Sift the cocoa powder in and mix it through to form chocolate cookie dough. Add additional cocoa powder to taste.
Roll 1-2 teaspoons worth of dough into small balls. Place each onto baking trays, about 2 centimeters apart, then flatten each slightly with your hand.
Bake for 8-10 minutes, or until cooked through. Remove the cookies from the oven and allow to cool.
Store the cookies in an airtight container to devour when ready!
