Courgettes are are underrated vegetable, but are a fantastic way of getting essential greens into your kids.

Makes: 4 servings
Ingredients
2 eggs
50g feta
50g grated parmesan cheese
Half tsp black pepper
50ml Jersey milk
Handful of spinach

Method
Crack the eggs into a bowl.
Pour into greaseproof paper-lined ramekins and place in the oven for 15 minutes.
Serve with a slice of toast, or pack in to lunch boxes for a cheap, easy lunch.
