Easy Banana Bread

Banana bread is a perfect lunch box addition for a quick energy boost in a busy school day.

: 12 servings
1 3/4 cups self-raising flour
1/4 cup plain flour
1 tsp ground cinnamon
2/3 cup, firmly packed brown sugar
1/2 cup skim milk
2 eggs, lightly whisked
50g butter, melted, cooled
2 overripe medium bananas, mashed
Preheat the oven to 180 degrees C. Grease a loaf pan. I seem to have misplaced my own loaf pan when making this recipe, so used a deep sided round cake tin instead.
Combine the flours, cinnamon, and brown sugar.
In a separate bowl, whisk together the skim milk, melted butter, and eggs.
Whisk in the mashed bananas.
Pour the egg mixture into the flour mixture and stir well until completely combined.
Pour the banana bread mixture evenly into the loaf tin.
Bake for 50 minutes, or until cooked when tested with a skewer.
Allow the banana bread to cool in its tin.
Slice into pieces to serve.
