Easy Banana Berry Breakfast Pikelets
A delicious snack that the whole family can have fun making together!

1 cup self-raising flour
1 teaspoon baking powder
1 tablespoon caster sugar
3/4 cup milk
1 cup frozen mixed berries
Combine the flour, baking powder and caster sugar together in a mixing bowl.
In a separate bowl, whisk the milk and egg together. Pour this over the flour mixture and whisk until combined and smooth. Make sure all of the lumps are whisked out before adding banana.
On a cutting board, use a fork to mash the peeled bananas into small pieces. Add these to the pikelet mixture and fold through until combined.
Heat a spray layer of canola cooking oil on a frying pan over medium heat. Pour spoonfuls of banana pikelet batter into the frying pan in batches of 3 or 4.
Drain some mixed berries on a paper towel, then pop 4-5 berries on top of each pikelet.
Cook the pikelets for 2-3 minutes, or until bubbled begin to appear on their surface, then flip and cook on the berry surface.
Once cooked, place the pikelets onto a plate and leave them in the oven at 150 degrees C to keep them warm while cooking the remaining mixture.
Serve with extra berries and sliced banana.
