Oh my! This no fuss apple tart is so simple yet so delicious! It tastes like apple pie without the effort and you can eat it cold or warm with cream! superb!

Makes: 10 servings
Ingredients
250g butter (very soft but not melted)
3/4 cup of caster sugar
1 egg
1 tsp vanilla essence
rind of one orange (grated very finely)
2 1/2 of plain flour
2 1/2 tsp of baking powder
2 x 400g diced apple or 6-7 granny smith apples diced.
Icing sugar for dusting
cream to serve
Method
Preheat oven to 200 C. Grease and lightly flour a loose-bottomed cake tin.
In a bowl or mixer, beat together the butter, caster sugar, egg, vanilla and orange rind until creamy and well mixed.
Add the flour and baking powder and mix until combined and a soft dough has formed.
Bring the dough in to a ball and put 1/3 of the mixture aside for topping. Press the remaining 2/3 of mixture in to the base of the cake tin.
With floured hands, dot the remaining dough (in small ball shapes) over top of the apple.
Bake for 40 minutes or until top is golden and pastry is cooked.
Dust with icing sugar when cool.
Serve warm with cream or it is perfect as an afternoon tea treat!
