The perfect dessert for a hot summer's day or any day for that matter. It is so light and refreshing that it almost feels healthy and the only preparation required is whipping the cream and chopping the ingredients. A real winner at any dinner party.
Preparation Time: 15 minutes
Cooking Time: (4 hours setting in the fridge)
Makes: 8 servings
Ingredients 1kg tub of strawberry yoghurt
300ml thickened cream, whipped
250g bag of big marshmallows chopped in half
400g or fresh strawberries, chopped in half (you can also use frozen strawberries but defrost them first)
Chocolate grated on top (optional)
Whip cream. Fold in yoghurt, chopped marshmallows, chopped strawberries and crushed meringue if using.
Allow to set in fridge for a few hours or overnight.
Serve with grated chocolate on top.
NOTE: make meringue earlier in the day so that it cools before adding to the ambrosia.
