East Asian flavours work beautifully with bream fillets. The flesh infuses with the traditional flavours and coconut oil (the scent of Asia), makes a wonderful alternative to olive oil, which doesn't quite add the necessary je ne sais quo which makes this dish so special.

Makes: 4 servings
Ingredients
1 Bream fillet
1 red pepper
1 onion
Chunk of ginger
Chilli powder
Cumin powder
Black pepper
Tblsp coconut oil

Required ingredients
Method
Stuff the fish with half of the vegetables and place in a large Pyrex dish.
Season and add the coconut oil. Place in the oven at 160 degrees/gas mark 3 for 50 minutes.
Remove from the oven and toss so everything is coated in the delicious flavours.
Pull the flesh from the bones, and serve alongside the onion and peppers.
Keep the bones to make fish stock.
