Cumquats are easily grown, are a fruit that some people eat as they are, however they are probably too bitter for most children.
Using coconut sugar instead of processed, refined sugars gives this jam a caramel taste and is ideal for sandwiches, parties, etc. and is a healthier option.
It is also a great way to use this fruit which many people throw out!
Preparation Time: 10 minutes
Cooking Time: 60 minutes
Makes: 2 ½ jars
Ingredients
500 g cumquats
2½ cups water
1 tbsp lemon juice
2½ cups coconut sugar
Method
Cut the cumquats into smaller pieces.
Put them in with the water and leave to soak overnight.
Pour all this into a large pot, add the lemon juice and bring it to the boil. Reduce the heat to a simmer and boil for about 30 minutes.
Stir until this dissolves, bring to the boil and allow to boil on high, without stirring, for 30 minutes or until the jam is at setting point.
To test for this, put a plate in the freezer for a few minutes, drop a bit of jam on the plate, and run your finger through the middle. If it stays separated, then the jam is done. If not, continue boiling and test again until it does.
Sterilise your jars -I do this by rinsing them with water, getting rid of as much of the water as possible and putting them in the microwave for a few minutes.
Pour the jam into the jars, and seal.
This jam will last for a long time, and is healthier than using ordinary sugar.
Store in the fridge once you have opened the bottle.
