This looks pretty fancy, but breath a sigh of relief because this is a one-tray dish that takes under an hour to create.

Ingredients
4 chicken thighs
2 garlic cloves
Half tsp ground cumin
Half tsp ground black pepper
Tblsp coconut oil
4 kale leaves
2 peppers
2 tomatoes
Method
Bash the garlic using a pestle and mortar.
Add the seasoning and bashed garlic to the chicken and add to a baking tray. Cook in the oven for 50 minutes at 165 degrees.
Roughly tear the kale and chop the tomatoes. Add to a bowl and top with the chicken.
Enjoy.
