Vegetable Cutlets are a good option of a healthy, crispy and crunchy snack item. They are prepared by mixing the boiled vegetables, shaped into balls and are shallow fried. It is a good item for kids to take in their lunch box to school, and relish with tomato sauce.

Makes: 8-10 servings
Ingredients
Vegetables for cutlet
4 boiled potatoes
2 chopped carrot
2-3 florets of cauliflower
½ cup of green peas
Dry Masala for cutlet
1 tsp chaat powder (available at any Indian grocery store)
1 tsp cumin powder
1 and ½ tsp coriander powder
½ tsp dry mango powder
½ tsp red chilli powder
A pinch of turmeric powder
½ cup bread crumbs
½ cup corn flakes
Oil for shallow frying
Salt to taste
Method
Chop and peel all the vegetables and boil it in a cooker, to make them a little soft. Now, mash them and mix them thoroughly.
Add chaat powder, turmeric powder, coriander powder, chilli powder, dry mango powder and salt to the above mixture and mix the entire ingredients.
Take half a bowl of cornflakes and powder it. Add it to the above mixture and mix it well.
Roll the above mixture into small balls and flatten them to give a shape of a round cutlet.
Transfer the bread crumbs in a bowl and roll the cutlets into it, to make it crispier.
Take some oil in a pan and place it on a medium flame. Shallow fry the vegetable rolls, till they become crispy and golden brown in color.
Transfer the fried balls on the tissue paper to remove the excess oil.
Serve the hot ‘bread rolls’ with tomato sauce.
