Crumbed Chicken with Herbs and Spices

A good alternative to KFC and other store-bought options, this crumbed chicken is flavoured by your choice of herbs and spices (the combination is up to you, but I used mixed herbs, cumin, paprika and Mexican chili powder). It also has hardly any ingredients, is super healthy, and your kids can even help you make it.

Preparation Time: 30 minutes
Cooking Time: 15-20 minutes
Makes: 14 pieces

2 chicken breasts
2 eggs (or one with some milk)
Oat bran
Herbs and spices (I used mixed herbs, cumin, paprika and Mexican chili powder)
Olive Oil

Trim the chicken breasts of fat and cut them into strips about 5 centimetres wide
Beat the eggs in a bowl
Pour some oat bran onto a plate and add generous amounts of the herbs and spices on top. I usually add quite a bit of the mixed herbs and cumin, and then more moderate amounts of paprika and Mexican chili powder, depending on how spicy I feel like making my meal
Coat the chicken breast in oat bran
Dip the piece into the egg
Return it to the oat bran and coat it again
Repeat the process for each additional chicken piece, adding the herb and spices to the oat bran each time (I've found mixing it through just dilutes it too much)
Leave the chicken pieces in the fridge for around 20 minutes so the coating firms up
Preheat the oven to 180 degrees (fan forced)
Spray both the pan and chicken with olive oil

I've just made enough for one person

Cook for approximately 15/20 minutes, or until the chicken is cooked through. Alternatively, you can also cook it in a pan on the stove on medium heat
