Most children like potato nuggets and in this recipe I have browned them first before adding the bacon.
I have also added some red cabbage, cooked slightly which can be omitted or changed to another vegetable depending on what your child will eat.
The crisp taste of the bacon with the apple and potato marry very well together for a tasty meal.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4 servings
Ingredients
Bit of butter
Olive oil
3 potatoes
175 g middle rasher bacon
2 eating apples, chopped
150 g red cabbage, shredded, slightly cooked (optional)
Method
Cube the potatoes, and cook for a few minutes until they are just cooked.
In a large frypan, heat a knob of butter and a bit of oil and cook the cubed, just cooked potatoes until they are browned (about 5 to 10 minutes).
Season with salt, and push to one side of the pan. Add the chopped bacon, and cook till it is crisp.
Add the cubed apples and cook till apples are golden.
Add a few whisked eggs and scramble them.
Serve with red cabbage or other vegetable that your children like.
