A deliciously rich yet subtle soup which can be served hot or cold.
If you think the thought of tomato soup sounds boring, then think again. This creamy soup is rich in texture and smooth in you mouth. It is sweet and refreshing to eat hot or cold and makes a delicious lunch, snack or even entrée.
Ingredients 2 cans of good quality whole or diced tomatoes
1 can of Heinz tomato soup
A handful of basil
A handful of parsley
3 cloves of garlic
1 cup of cream
1 tablespoon of sugar
1 tablespoon of dried vegetable stock
Dice garlic up and fry on extra virgin olive oil.
Add the canned tomatoes and stir until slightly boiled. Reduce to low.
Add the Heinz soup can and stir well, cooking on low.
Add the stock and sugar.
Add the basil and parsley.
Transfer to a blender and blend until liquid.
Return to saucepan and add the cream.
Stir together and serve up with some hot crusty bread.
