Cooking only one dinner that will be enjoyed by the whole family rather than different meals for everyone is definitely the best way to go if you want to save time and encourage family mealtimes. I really enjoy this creamy pork fillet and best of all my sometimes fussy three year old declared it was 'yummy' on first taste and my one year old also devoured his slightly more mushed up version. When it's adults only I would add a splash of white wine and seasoning but when the kids are involved I skip this and it still tastes great.
It's quick and simple to make and if you cook the pork at the same time as the sauce and rice, you can have it on the table within 15 minutes.
Pork contains six essential vitamins, four minerals, protein and energy. A handful of soya beans is great to add in too. They contain heart healthy fats, protein, iron, folate, calcium and potassium.

Makes: 3-4 servings
Ingredients
1/2 onion
4 button mushrooms
Splash of oil for frying
2 heaped tbsp creme fraiche
145g pork tenderloin fillet
30g cooked soya beans (or a handful of peas)

Method
Finely dice the onion and fry gently in a little oil.
Slice and dice the button mushrooms into small pieces and add to the onion, cooking until soft.
Add the creme fraiche, stir through and leave in the lowest heat while you prepare the meat.

The mild, creamy sauce is a hit with kids and adults
Remove any excess fat or sinew from the pork tenderloin fillet.

Trim any excess fat before cutting into medallions
Slice medallions of the pork about a centimetre thick.
Gently pan fry the pork until cooked through, slightly brown but still tender. It should only take a few minutes as the pork has been cut relatively thin.
Add the pork to the creamy mushroom sauce.
Stir through the soya beans (or peas) and you're ready to serve.
For younger children you can cut the meat into smaller pieces or give it a blitz with a blender.

A slightly more mushed up version for my one year old but served with rice for extra texture.
I usually serve this with rice but new potatoes or pasta would be just as good as an accompaniment.
