A deliciously green pasta feast which will soon become a family favourite.
This is a fresh basil dish that certainly beats pesto from a jar. Fresh basil is a lot more flavoursome and delicious than any other herb in my opinion and so fragrant that the whole house ends up smelling beautiful. This dish will take you minutes to prepare and it is very easy to make. You can literally whip this up in 15 minutes and yet have a gourmet meal on the table.
Ingredients 2 large handfuls of fresh basil
100g Parmesan cheese
3 cloves of garlic
1.5 cups of cream
A handful of pine nuts
500g of penne pasta
Salt and pepper to taste
2 tablespoons of extra virgin olive oil
Note: You may wish to add a handful of leek for a more intense flavour. If so, fry it up with the garlic.
Pick your basil fresh for best results.
In a frying pan fry up the garlic.
Blend your basil in a food processor or use a mortar and pestle.
Add the basil to the garlic and fry for a few moments till wilted.
Add the pine nuts.
Add the cream.
Shred the Parmesan into the hot sauce and stir up.
