I present to you (cheats) gourmet pasta. Creamy, cheesy, and a little bit decadent, it makes use of store cupboard staples and turns otherwise plain old pasta tubes into a luxurious mid-week treat.
The wonderful thing about the dish is that it goes far, and when serving up dishes to kids, longevity is key. If you can make a meal stretch, wonderful.
Preparation Time: 2 minutes
Cooking Time: 20 minutes
Makes: 5 servings
Ingredients
25g grated cheese (ideally cheddar)
50ml whole milk
1 onion
Tsp cornflour
1 garlic clove
1 rosemary sprig
75g penne pasta (fussili works just as well)
Half tsp black pepper
Half tsp salt
Half tsp mustard
Half tsp mixed spice
3 basil leaves (to garnish)

Required ingredients
Method
Chop the onion and garlic.
Add to a frying pan with a glug of oil, cook over a medium heat for 5 minutes.
Grate the cheese and set aside.
Place the pasta in a saucepan of boiling water, and turn to a simmer. Cook for 20 minutes.
Add the pepper and rosemary to the saucepan.
Add the cornflour and milk. Whisk quickly until smooth.
Add the mustard and mixed spice, and stir.
The sauce thickens relatively quickly at this point. Transfer the pasta to the saucepan and coat in the sauce for 2 minutes.
Serve generously in bowls.
Serve at either lunch or dinner, and your kids will want gourmet pasta all the time.
