Brighten up your day with these sweet and crunchy confetti cookies. Make them for birthday parties, lunch or lunchbox treats!
Preparation Time: 10 minutes
Cooking Time: 12 minutes, 30 minutes refrigeration
Makes: 20-25 servings
Ingredients
90g unsalted butter, softened
1/4 cup caster sugar
1/2 tsp vanilla essence
1 cup plain flour
1 egg
1/4 cup confetti or 100s & 1000s
Method
Preheat oven to 160°C, line a baking tray.
Beat together the butter and sugar until pale and creamy.
Add the egg and beat well.
Sift in the flour over the butter mixture.
Stir in the confetti or 100s & 1000s and combine until a soft dough forms.
Transfer the dough onto a lightly floured surface.
Shape into a log about 4cm in diametre.
Wrap in plastic wrap and refrigerate for 30 minutes or until firm.
Using a sharp knife, cut into 1 centimetre thick rounds.
Place on the baking tray and bake for 12 minutes or until golden.
Cool on trays for 5 minutes and enjoy.
