Classic Strawberry Shortcake
Nothing is better than a Classic Strawberry Shortcake to sweeten up your day with. This is a simple and basic recipe that the whole family will enjoy.

250g self-raising flour
75g unsalted butter
4 tbsp milk
3 tbsp caster sugar
1 tsp baking powder
1 egg, beaten
½ tsp vanilla essence
250g fresh strawberries
300 ml thickened cream
Preheat the oven to 200°C and line a tray with baking paper.
Sift together flour and baking powder. Add the butter and using fingertips rub together until resembles fine breadcrumbs.
Add in sugar and combine well.
Make a well in the centre.
Add in egg, milk and vanilla essence. Combine until a soft dough forms.
Place the dough onto a lightly floured surface and roll out to approximately 20cm in diameter.
Transfer onto the prepared tray and bake for 10-15 minutes or until firm and golden. Place on a wire rack to cool.
Meanwhile wash and hull the strawberries and cut into slices.
Beat the cream until medium to firm peaks.
When the shortcake has cooled, using a bread knife slice it in half.
Spread a layer of cream over the bottom half of the shortcake.
Arrange the strawberries over the cream.
Repeat with another layer of cream, then strawberries.
Place the top half of the shortcake over and spread cream over the top.
Decorate with extra strawberries and icing sugar to serve.
