Cinnamon Banana Porridge

Cinnamon and banana porridge is a quick and easy breakfast to fuel the family for the big day ahead. Fresh and tasty, this porridge is scruptious and power packed with energy to last through the morning!



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
1 1/2 cups traditional rolled oats
3 cups milk (full cream or reduced fat as desired)
Pinch of salt
1 1/2 tablespoons brown sugar
2 medium bananas
1 teaspoon ground cinnamon

Method
Place the milk in a saucepan over medium heat and bring the milk to a simmer.

Add the oats and salt to the milk and use a wooden spoon to stir through. Bring this mixture to the boil, then reduce the heat slghtly.



Cook, continuing to stir with a wooden spoon for about 5 minutes or until the porridge becomes thick and coats the spoon.

Remove the porridge from the heat. Cover an allow to stand for 5 minutes while the porridge cools and thickens slightly.



Sprinkle with sugar and stir through.



Spoon the prepared porridge into 4 separate bowls. To serve, sprinkle with cinnamon and top with slices banana.





The brown sugar can also be replaced with 1 tablespoon of honey.

Alternately, the porridge can be prepared in a microwave, however I would suggest using the microwave on a bowl by bowl basis rather than putting the whole lot in at once. To do this, spread the milk, oats and salt equally between 4 bowls, and stir. Place each bowl in the microwave for 2-3 minutes, remove and stir once more. Add brown sugar to each, stir through, then top with the desired amount of cinnamon and banana. Or, place the whole amount of milk, oats and salt in a microwave safe bowl, stir, and microwave uncovered on high for 6-7 minutes or until cooked through. Stir the sugar through, then divide equally between bowls and top with cinnamon and banana.

Water can also be used instead of milk. In this case, use 3 cups of cold water instead of the 3 cups of milk.
